Rick Simons is a self-taught veteran chef with over twenty-four years of culinary experience whose pallet for spices and flavors is very impressive. His journey started at a very early age of being in the kitchen with “Mama Johnnie” Mae Lindsey, whose feet he was always under as she cooked.
Rick went to school in Florida when he was eighteen to study sound engineering. After receiving his degree, he decided to take a year off. He started working at a French restaurant in Pascagoula. He worked with a wonderful pastry chef who was trained by Wolfgang Puck and his love of food was once again rekindled. After working at that restaurant, he moved to work in a large hotel, and after several months was promoted to Executive Chef. This is when Hurricane Katrina hit and relocated him to Natchez.
While Rick was on the coast he had started experimenting with spices and that was the beginning of his spice line. He moved to Natchez and his first job was at a restaurant 1818 located at Monmouth Historic Inn. He created the very first menu they opened with. After that he decided to work more with his spice line, but the demand for his spices had him back in the kitchen again. That was the beginning of Slick Rick’s which he opened in 2010 and it has been going strong since then. Rick has always loved to be creative and think outside the box, add that to the fact that he has a shaved head, the name “Slick Rick’s was based on him.
In 2014 Rick opened Johnnie Mae’s across the river, but COVID caused that business to close. When that happened, he had more time to focus on the ever-changing menu at Slick Rick’s. He is the sole owner and creator of the menu, and the “Burger of the month” which is delicious! His style is one that has a great deal of diversity, and because he is more of a leader in his field than one that “keeps up” things are always on the cutting edge.
Since Rick is such a hands-on owner, he has no food to waste, so he is always trying to keep things fresh and affordable. If you are looking for something that is absolutely loaded with flavor and nothing like you have ever tasted before, then Slick Rick’s is the place to visit. The atmosphere is laid back and the entire staff is always welcoming. If you have not tried “Slick Rick’s” I highly recommend you do! You will not be disappointed!!
